With two hectic schedules and one impatient toddler, we’re lucky if have dinner as a family more that a few times a week. When we do have dinner as a family, it’s usually delivery (thanks, DoorDash for keeping us fed!) or picked-up at the Whole Foods hot bar! This isn’t ideal, but look at the bright side: not cooking means more time with Harlowe. The not so bright side is that I’m not sure what’s in my food and chances are, it could be healthier. Making use of my fruits and veggies quickly was easier than I imagined. Over the weekend, we hosted a few friends for brunch at our home. A medley of fresh fruit was the perfect addition to gluten-free blueberry pancakes. I just sliced the fruit into bite-sized and served it along side the main dish.

For some reason, being pregnant makes me crave milk like a baby cow. Having low-fat cottage cheese with my fruit has been one of my favorite summer treats.

OMG, there are no words for how much I love pesto. I’ll drizzle this savory sauce tastes good on gluten-free ravioli any day of the week, but decided to mix it up a bit last night by spooning it on to baked chicken with tomatoes and mozzarella. The tomatoes were so fresh, we ended up eating a few raw with a bit of salt sprinkled on top. Happy maternity leave to you 🙂 Yes, getting a healthy meal put together for dinner every night is a hard task when working full time. This is why we usually eat dinner so late at night! I love the idea of getting farm fresh food sent to the home. One of the most annoying things is after a full day of work realizing we need to go to the food store to pick up items for dinner.
